Chicken Coriander Curry

This is one of my moms recipes which my husband loves and hence this is my first post amongst all the recipes that I would be writing:

Chicken Curry


Ingredients:

For Marinating:
  • Chicken - 1.5 Pounds
  • Curd - 3 tbspn
  • Lime Juice - 3 tspn

For Curry:

  • Onions - 3 Medium Sized finely chopped
  • Tomato - 1 Big finely chopped
  • Coriander Powder - 3 tbspn
  • Turmeric Powder - 1/4 tspn
  • Chilli Powder - 1 tspn
  • Chicken Masala Powder - 2 tspn
  • Ginger & Garlic Paste - 2 tspn
  • Coriander Leaves - 1/2 Bunch
  • Cashewnuts - 10

Method of Cooking:

Marinate the chicken with the marinate paste, cover and refrigerate it for an hour.

Heat oil in pan. Saute onions till they turn slight pink. Add ginger garlic paste and saute it for a minute. Add tomatoes and saute it till oil separates.Add the coriander leaves and saute it for a minute.Then add all the spices like Coriander, Chicken Masala, Chilli & Turmeric powder. Saute it for 5 minutes till oil separates from the spices (but be cautious that the spices dont get burned). Once done take it off the gas and allow it cool.

Once cooled, make a paste of the above mixture along with cashewnuts.

Heat 2 tbspn oil in a pan. Then saute the above paste once again for 2-3 minutes. Add the chicken to it and saute it for 5 minutes on low flame. Add water (as per thickness required) and allow it get cooked completely. The gravy gets thickened and add 2 tbspn butter to add to the taste.

Once done garnish with coriander leaves.

Serve hot with rotis, naans or rice. Hope you enjoy eating it :)
